I got the tusk fire extinguisher mount from Rocky Mountain. A two pack of extinguishers from home Depot (5$ more than a single from RM, same model) and mounted one up. Pretty happy with results I think I'll buy another mount and do two off center. Had to shim mount with some Teflon to silence rattles. One pin frees extinguisher and it's reached from any seat.
I suggest you use some lock tight on the screw that is opposite the quick release pin. I found mine hanging by just the quick release pin after part of a ride. After lock tight, it hasn't been a problem.
Done and done. That's an excellent point, when I got the mount the other pin/screw was barely finger tight I did put some locktite on it and screwed it down tight. I then realized I had overtightened it when the male piece of the mount wouldn't slide in so I had to take it back out. This wasn't fun as I had to use a horizontal screw driver without much leverage on the top side after the locktite had started to set up.
